Courteney Cox Has A Vegan Soup Recipe
Courteney Cox took to Instagram to share a video of herself preparing a delicious Vegan Zucchini Leek Soup. She told her followers that in case the steak video didn’t appeal to them, she has a vegan soup recipe up her sleeve. With just 4 ingredients, it certainly looks super easy to prepare and we’re salivating already. Plus watching Monica Geller aka Courteney Cox goofily prepare the soup while squeezing in a dance break in between simply hits home. So, here’s Courtney Cox’s Vegan Zucchini Leek Soup recipe.
Ingredients For The Soup
- 4 large zucchinis
- 1 and 1/2 cups of cashews
- 8 cups of vegetable broth
- 2 leeks
- Olive oil
- Salt
- White or black pepper flakes
- Chilli flakes ( optional)
- 3 to 5 Garlic cloves
Method To Prepare The Soup
First, soak the 1 and 1/2 cups of cashew in water for one hour. Next, cover the bottom of the pot with olive oil and add the garlic cloves with a generous pinch of salt. Then, slice the 2 leeks ( or just 1 leek if you don’t have friends). After that, saute the leeks for 5 to 10 minutes until they soften. After this, slice the zucchini into round shapes and add them to the pot with leeks. Sprinkle more salt and a teaspoon of pepper.
You can also add chilli flakes if you like your soup spicy. This is an optional step. Next, add 8 cups of vegetable broth. You can also buy a packet of veggie broth if you don’t have fresh broth. Add the soaked cashews. Give it a good stir. Then, bring it to a boil and cover the lid. Let the concoction simmer for around 45 minutes. You can even take a dance break like Courteney Cox during this step. Then, you can add the concoction to a blender or use a hand blender to puree it.
Voila! Your Vegan Zucchini Leek Soup is ready. Courteney Cox says if you aren’t a vegan you can even add grated pecorino on top.
