This dish is extremely nutritional with ingredients such as spinach and fenugreek leaves! It is made into a finepaste and then tempered with garlic, ginger and green chillies. 

1. Kafuli

Craving doughnut holes but in Uttarakhand style? This dish is just that! All you need is wheat flour, jaggery (melted) or sugar, cardamom powder, water, and fennel seeds. Make the batter and fry gulgulas until golden brown.

2. Gulgula

Take rice flour, ghee, water, and jaggery to make a thick batter and fry it in small batches until extremely crispy. This is famous in Garhwali region.

3. Arsa

Manduwe ka atta or ragi is used to make this dish. it is roasted, then cooked with water until dough-like consistency. Drizzle generous ghee on top!

4. Baadi

This is a lentil soup which is made with overnight soaked black grams (bhatt), horse grams (gahat) and rice. then in is turned into a fine paste and tempered with lot of spices.

5. Dubuk

It is a mind-blowing sweet dish of the Kumaon region which is basically roasted khoya with dry fruits mithai wrapped in maalu leaves. It is simply divine!
