Are you bored of eating the same noodles all the time? It's time to relish something new and try Chef Saransh Goila's recipe for Ghee Roast Potato Noodles.

• 300g boiled potatoes • 1/2 tsp garlic powder • 1 tsp crushed black pepper • Salt • 95g potato starch • 1½ tbsp coriander seeds • 1/2 tbsp jeera • 1 tsp saunf • 1 tsp poppy seeds • 1 tsp black peppercorn • 1/2 tsp methi seeds • 10 dried red chillies (soaked) • Soaked cashew nuts • Garlic cloves • 2 tbsp ghee • Curry leaves • 1 tbsp tamarind paste • 1/2 tbsp jaggery • Water

• Take a mixing bowl to mash boiled potatoes with garlic powder, crushed black pepper, salt, and potato starch. Splash some water, knead everything gently, and give the desired noodle-like shapes.

• Add potato noodles to boiling water and cook them for a couple of minutes. Turn off the gas once they start floating.

• Dry roast coriander seeds, jeera, saunf, poppy seeds, black peppercorn, and methi seeds till fragrant. Transfer the roasted spices to a mixer grinder and add dried red chillies (soaked), cashew nuts, and a splash of water. Blend till you get a smooth paste.

• To cook ghee roast sauce, add ghee to a pan and temper curry leaves. Pour the freshly made mixture and cook for a few minutes to thicken its consistency.

• Next, add a splash of water, salt, and jaggery and mix well. Lastly, add boiled potato noodles to the gravy and toss them gently.
