Bengali cuisine is famous for its huge variety of delicacies prepared with fish. Here's a recipe to cook a simple fish curry using Shol Mach (Snakehead Murrel).

• The first step is to buy fresh fish from the market and cut it into pieces very carefully. Once cut and washed well, coat the pieces using salt and turmeric powder.

• Burn some dried coconut leaves and use them to burn red chillies. Next, grind the burnt chillies to add to the fish.

• Pour oil into a pan to fry the pieces of fish and transfer them to a plate. • In the same pan, fry potatoes with some salt and turmeric powder. Once fried, transfer them to a bowl.

• Next, add some onion paste, ginger paste, garlic paste, half of the burnt red chillies paste, and turmeric powder and cook for a couple of minutes.

• Pour some water into the mixture and add water and fried fish pieces to the pan. • Cook for at least 10-12 minutes. In the next step, add garam masala paste and the remaining chillies paste.
