2 large cucumbers, 1 cup semolina, 1 cup grated jaggery, 1/2 cup grated coconut, 1 teaspoon cardamom powder, Pinch of salt, Ghee, milk, yoghurt.

Grate two large cucumbers and squeeze out excess water using a muslin cloth.

In a mixing bowl, combine the grated cucumber with 1 cup of semolina, 1 cup of grated jaggery, 1/2 cup of grated coconut, 1 teaspoon of cardamom powder, and a pinch of salt.

Mix the ingredients thoroughly and let the batter rest for about 15 minutes to allow the semolina to absorb moisture.

Grease a steaming tin or cake tin with ghee.

Pour the batter into the prepared tin and smooth the top with a spatula.

Steam the batter in a pressure cooker or steamer for about 20-25 minutes, or until a skewer inserted into the centre comes out clean.

Once cooled slightly, cut the cake into diamond shapes and serve warm, garnished with grated coconut and a drizzle of ghee if desired.
