• 2 cups whole wheat flour/ 1 cup whole wheat flour + 1 cup maida • 1/4 cup water • 1/4 cup + 2 tbsp milk • 2 tsp sugar • 3/4 tsp dry Yeast • 3/4 tsp salt • 100g boiled mashed potatoes • 2 tbsp butter • Turmeric powder • Sugar
• In the first step, make tangzhong roux by mixing 1 tbsp whole wheat flour with 2.5 tbsp milk and cook until you get a dense consistency.

• Add yeast and sugar to lukewarm water to activate yeast.

• Next take a huge bowl and knead a soft dough using atta, flour, water, milk, salt, mashed potatoes, and tangzhong roux.

• Once ingredients have been mixed gently, add butter and knead once again to form a smooth and round bun dough. Place a cloth piece on the bowl and keep it aside for about an hour till it doubles in size.

• Form small dough balls and keep them aside under a cloth piece again. Once their size doubles, brush a mixture of milk, sugar, and turmeric powder, and sprinkle sesame seeds on top.

Bake at 190°C for 20 minutes, brush melted butter on freshly baked buns, cool them, and relish!
