• 2 tbsp oil • 1 tsp cumin seeds • 2 chopped green chillies • Paste made using 2 onions • Paste made using 2 tomatoes • 2 potatoes • 1 tsp garam masala powder • 1 tsp red chilli powder • 1 tsp coriander powder • 1 cup makhana (fox nuts) • Salt • Coriander leaves

• Take a pan, heat oil, and fry makhana till they turn crispy and perfectly golden brown.
• Next, heat oil in a pressure cooker and fry onion paste on a medium-low flame. Cook till the paste becomes golden brown. Once done, add cumin seeds, coriander powder, garam masala powder, green chillies, and red chilli powder, and cook for a couple of minutes.

• In the next step, pour tomato paste and cook for a few more minutes to thicken the gravy. Add, diced potatoes and sprinkle salt. Put the lid and pressure cook for 4 whistles.

• Next, simmer the gravy for about 5 minutes and pour the fried makhana. Mix everything well and Makhana Aloo Curry is ready.
