Reimagining Aloo Baingan

In his latest recipe, the chef has reimagined Aloo Baingan and turned it into a crispy, roll-like dish that simply looks delicious!

Ingredients

3 Eggplants 4 boiled potatoes Mustard oil Jeera Kalonji seeds Coriander seeds Saunf Chopped ginger, Chopped green chillies Coriander powder Red chilli powder Haldi powder Cornflour Maida Bread crumbs Salt

Process 

1. Start by slicing the eggplants into long strips. 2. Then, add salt to a bowl of water and soak the slices in it. 3. Next, take a pan and add some mustard oil to it.

Follow These Steps 

4. To the pan, add some jeera, kalonji seeds, coriander seeds, saunf, chopped ginger, and chopped green chillies. 5. Then put the boiled potatoes into the mix and add some coriander powder, red chilli powder, and haldi powder to it. 6. Add a bit of water and salt as per taste to the potato mix and mix everything well. 

Time To Make Aloo Baingan 

7. Mash the potatoes to make them smooth. 8. Now, take the eggplant strips and add the potato filling to them. Make sure to spread it evenly. 9. Roll it to form a cylindrical spiral shape.

10. Next, make a batter with some cornflour, maida, and salt. 11. Dip the eggplant rolls in this batter and then coat them in bread crumbs.

Air Fry The Dish

12. Then, put these rolls on an air fryer and let them cook at 170°C till they turn crispy and golden brown. 13. Your dish is ready to be served.
