The chef recently shared on Instagram how a chef at Bansal Sweets taught him this exact recipe for Kaju Katli about 30 years ago.

1. Take thoroughly washed 250 gm cashews in a grinder, add 1/4 cup water, and grind to get a fine texture. Make sure you grind in pulse mode.

2. Take a heavy bottom or non-stick pan and pour the paste and 200 gm of sugar. Stir it continuously till the cashew mixture starts leaving the pan surface. To check if it is ready, try making a small ball. If you can make it, then it is ready for the next step. 3. Once done, cool it for 1-3 minutes and then transform it to a greased plastic or silicone sheet.

4. Knead the mixture continuously on the plastic. Once it gets smooth, roll it, add edible foil, and set aside for about 30-40 minutes. 5. Then, cut in desired shapes and enjoy.
