250 g of prawns Salt 1 tbsp of Kashmiri chilli powder 1/2 tsp of turmeric powder 1 tbsp of vinegar 2.5 tbsp of virgin coconut oil (for marination) 1.5 tbsp of virgin coconut oil (for the gravy) 2 medium onions (sliced) 2 tbsp of ginger-garlic paste 1 tbsp of Kashmiri chilli powder (for the gravy) 1 tbsp of coriander powder 1/2 tsp of garam masala 1/3 tsp of fennel powder 2 tomatoes (sliced) 2 green chillies (sliced) few curry leaves 3/4 cup of coconut milk

First, marinate the prawns with salt, turmeric powder, red chilli powder, vinegar and let it rest for an hour.

Shallow fry the marinated prawns for 2 minutes and keep them aside.

Pour coconut oil, add sliced onions, spice powders and ginger-garlic paste to the same pan you cooked prawns in and saute for a few minutes.

Once the onions are sauteed well, add the curry leaves, tomatoes and coconut milk. Cover the vessel with a lid and let it cook.

Finally, add the roasted prawns and the gravy thicken to become a semi-dry mixture. Your Prawn Roast is ready!
