If you are in the mood to relish some savoury noodles cooked with the spicy taste of chilli oil, here's a recipe shared by Chef Saransh Goila.

• Onion • Garlic • 100g chili flakes • 3 star anise • Some black peppercorns • 2 tsp coriander seeds • 3 tbsp soy sauce • 1 tsp oyster sauce • 1 tbsp toasted sesame oil • 2 tsp sesame seeds • Salt • Pepper • 1 tbsp peanut butter • Udon noodles • Spring onion greens

• Start by frying onion and garlic in some oil till they are perfectly golden brown. Make sure to fry on low flame. • Next, take a small bowl and add chilli flakes, star anise, black peppercorns, and coriander seeds. • Strain the freshly cooked onion and garlic oil into the bowl of chilli flakes and spices.

• In the bowl of oil and chilli flakes, add 2 tbsp soy sauce, 1 tbsp toasted sesame oil, sesame seeds, salt, and fried onion & garlic. Stir all the ingredients well and store the chilli oil in an airtight container.

• Meanwhile, boil some udon noodles as well. • Next, take a sperate bowl and add 2 tbsp chilli oil, peanut butter, 1 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp oyster sauce, a spoonful of noodles water, salt, and pepper.

• Once stirred well, add the cooked noodles to the chilli oil and sauces mixture. • Mix the noodles with the sauce perfectly so that everything gets coated well.
