For the eighth day, make mouth-watering Pistachio Barfi with this recipe by digital creator Binjal Pandya (@binjalsvegkitchen).
1 cup pistachios 1 cup crumbled paneer 1 cup milk powder 1 cup milk Green food colour ¾ cup powdered sugar Ghee Cardamom powder Edible silver vark

1. Add the pistachios, paneer, milk powder, and milk in a blender and make a fine paste.
2. Put the smooth paste in a pan and add 2-3 drops of food colour to it. 3. Cook the mixture on medium flame for about 5-6 minutes till it thickens.
4. Then add powdered sugar along with ¼ tsp of cardamom powder to the mixture. 5. Whisk it all together.
6. Keep stirring till you get a dough-like consistency. 7. Then, add 1-2 tbsp of ghee and keep stirring till the mixture comes off the sides of the pan.
8. Line up a container with parchment paper & place your Pistachio Barfi on it. 9. Let it cool down for a few hours and then garnish with silver vark or nuts.
