Wash and dry the fruit thoroughly. If using larger fruits like pineapple, cut them into bite-sized chunks.

Combine the sugar and water. Bring the mixture to a boil, stirring until the sugar dissolves completely.

Once the sugar has dissolved, continue cooking the syrup without stirring until it reaches 149°C.

If using corn syrup or honey, stir it into the hot sugar syrup and let it cook for an additional 30 seconds.

Carefully thread the fruit onto the bamboo skewers, leaving a few inches of space at the bottom for handling.

Working quickly, dip the skewered fruit into the hot sugar syrup, coating it evenly.
