In a small bowl, combine the mustard seeds with white wine vinegar and water. Let them soak for at least 24 hours, allowing the seeds to absorb the liquid and soften.

Transfer the soaked mustard seeds and liquid into a blender. Blend until you achieve a smooth, creamy consistency.

Add sugar, salt, turmeric, minced garlic, and honey to the blended mustard mixture. Blend again until all the ingredients are well incorporated.
Pour the blended mixture into a saucepan. Cook over medium heat, stirring constantly, until the sauce thickens, usually about 10-15 minutes.

If the sauce is too thick, gradually add water until you reach the desired consistency. Continue to cook for a few more minutes after adding water.

Remove the saucepan from the heat and let the mustard sauce cool completely. Once it has cooled, transfer it to an airtight container.
