Chef Kunal Kapur shared the ultimate way to use watermelon rind, which you always throw away. He shared the recipe for Watermelon Peel Chutney, and here’s how you can make it at home.
3 cups watermelon peel 2 tbsp oil 2 dry red chillies 1 tsp mustard seeds 1 tsp fennel seeds 1 tsp cumin seeds 2 tsp chopped ginger Salt ½ tsp black salt 2 tbsp vinegar ½ cup sugar 1 tbsp Kashmiri red chilli powder

1. Peel the watermelon. 2. Remove the green layer on the rind, even the light green one. 3. Then, dice it into smaller pieces.
4. In a pan, add a little oil and roast the dry red chillies in it. 5. Next, add some mustard seeds, fennel seeds, and cumin seeds. 6. Add some chopped ginger, and stir it.
7. Add the chopped watermelon peel along with salt to taste. 8. Then, add some black salt and give it a good toss.
9. Cook it for two minutes on high flame. 10. Next, add vinegar, sugar, and Kashmiri red chilli powder.
11. Mix it all well, cover it with a lid, and let it cook for 15 minutes. 12. Take off the lid and cook till the water evaporates. 13. Once the mixture thickens, take it off the heat, and your chutney is ready.
Once it cools down, you can store the Watermelon Peel Chutney in the fridge for up to 10 days!
