Inspired by a Chennai restaurant, Aruna Vijay prepared Beetroot Dumplings without any dough.

-1 big Beetroot -1.5 cup of Water -1/4 cup of Sugar -Basil Pesto -Orange segments -Crumbled paneer (Seasoned with salt and pepper) -Chopped walnuts

First, peel a large beetroot. Then, using a mandolin slice it into thin roundels.

Then, add water and sugar in a saucepan and let it boil. Add the beetroot roundels in this boiling water.

Once the beetroot slices soften, remove, strain and dry them.

Stuff the beetroot roundels with seasoned crumbled paneer, pesto, chopped walnuts and orange.

Seal the dumpling with a little water in your fingertips. Garnish with basil and chopped walnuts and enjoy the Beetroot Dumplings cold.
