You do not need to miss out on enjoying a lavish holiday feast just because you do not eat meat. Here's a recipe to cook delicious roasted vegetable pot pie at home this holiday season.

• Before you start preparing the dish, preheat the oven to 220°C. • Now let's start cooking! Boil potatoes, carrots, celery, and peas in a pan for a couple of minutes.

• Meanwhile, take another pan and saute garlic, mushrooms, and onions. Once potatoes, carrots, celery, and peas are boiled, add these to the frying pan as well and cook for a few minutes.

• Once you are done sauteing, pour a good portion of vegetable broth and let everything boil. After the veggies are boiled properly, add some salt and black pepper powder.

• For the last step to make the veg stuffing, make a mixture of cornstarch, soy sauce, and water, and add it to the mix till consistency becomes a bit thick.

• Now take the bottom pie crust dough, add the stuffing, add a layer of dough on top, and seal it efficiently. Take a knife and make small slits on top. • Bake for around half an hour and the pot pie is ready to be served!
