Hina Gujral has a nice recipe to give karela a yummy spin. Instead of adding karela in curries, she makes a Karela Salad.

-1 medium size bitter gourd -1 medium size cucumber -1 small size onion -1 green chilli - Handful of fresh coriander -1 tablespoon of peanuts -1 tablespoon of grated coconut -1 teaspoon of rock salt -lime juice -1 tablespoon of sesame oil -1/2 teaspoon of mustard seeds -few curry leaves

First, scrap the skin of the bitter gourd and de-seed the veggie.

Then, cut the bitter gourd into small pieces and salt it and keep it aside.

Meanwhile, finely chop other veggies and crush the peanuts.

Later, squeeze out all the juices from the bitter gourd.

Finally, combine the bitter gourd pieces, chopped veggies, peanuts and spices. Finish off with a tadka and your Karela Salad is ready!
