Many of us do not really enjoy eating karela because of the bitter taste. Well, it is time to change our opinions and prepare appetising Karela Kadhi at home. This recipe shared by Chef Saransh Goila will make you fall in love with this vegetable.

• Start by peeling karela and cutting them diagonally to get small-sized pieces. Next, soak the pieces in a bowl of water and salt for at least 10 minutes.

• Squeeze out all the excess water and mix besan, rice flour, salt, onion slices, ajwain, red chilli powder, aamchur powder, and jeera (dry roast) powder with the veggies.

• Once done, add 1 tbsp mustard oil, coat karela pieces well, and air fry.

• To make kadhi, take a big bowl and whisk curd, turmeric powder, red chilli powder, besan, and water.

• Take a pan, add oil, and temper fenugreek seeds, cumin seeds, ajwain, and juliened ginger. After some time, pour the whisked dahi and besan mixture into the pan and cook until the kadhi starts boiling.

• Prepare a tadka by tempering chillies, curry leaves, and mustard seeds in ghee. Pour it into the kadhi pan.
