If you’re always on the lookout for new and delicious recipes, try out this Toushe Bhakri, or cucumber pancakes, recipe by chef Aruna Vijay.
1 cup grated cucumber ¼ cup grated coconut 2 tbsp rice flour (optional) ¾ cup sooji 1 finely chopped green chilli 1 tsp grated jaggery Handful of chopped coriander Salt Curry leaves 1 tsp chopped ginger
1. In a mixing bowl, combine grated cucumber with all the other ingredients. 2. Let the mixture sit for 10 minutes.
3. Take a small portion of the dough and place it on a greased banana leaf or parchment paper. 4. Flatten it evenly with wet fingers.
5. Heat a tawa and carefully place the leaf with the flattened dough face-down on the tawa.
6. Wait a few seconds, then gently peel off the banana leaf, leaving the roti on the tawa.
6. Drizzle some oil around the edges and cook on a low flame until golden brown on both sides.
And that’s it! Your Toushe Bhakri is ready to be served and enjoyed with some homemade butter.
