Khow Suey might not be the most traditional dish for monsoon India but it is comforting all the same. Here’s a quick and easy recipe for Khow Suey.

Prepare fried onions, fried garlic, chopped green chillies, chilli flakes, crispy noodles, lemon wedges and chopped green onions in advance and set aside.

For the base, grind ginger, garlic, coriander, turmeric peppercorns and green chillies. Set aside.

Heat oil in a pan. Add garlic, green chillies, onions, curry leaves, red chillies, and the paste. Stir for some time.

Add coconut milk to the pot which will form the body of the broth. Add a protein of your choice and top with crushed lemon grass.

Boil noodles in advance and keep them aside.

Serve all the toppings in tiny different bowls. Make sure you also serve the noodles and the broth separately.

Take a bowl take some noodles. Pour enough broth so that the noodles are submerged. Add each topping as per your liking and enjoy!
