-1/2 cup basmati rice, rinsed and drained -5 g gucchi (around 10 small pieces), plain or smoked -1/2 onion, thinly sliced (optional) -1 tablespoon peanut oil or ghee -1/4 teaspoon cumin seeds -2 cloves -1 green cardamom -1 tejpatta (Indian bay leaf) -1 small piece cinnamon stick -1/4 teaspoon salt -1 1/4 cup water (including soaking liquid from gucchi)

Rinse gucchi in cold water, removing dirt. Soak in warm water for 5-10 minutes. Drain, reserving the soaking liquid. Chop gucchi (optional), or leave whole.

Heat oil/ghee in a pan. Add cumin seeds, wait till fragrant. Add cloves, cardamom, tejpatta, and cinnamon.

Add onions (optional) and brown lightly. Add drained gucchi and cook for 2 minutes. Add rinsed rice and stir for another minute.

Add reserved soaking liquid and additional water (2.5-3 times rice quantity). Add salt. Bring to a boil, then reduce heat, cover, and cook for 10 minutes.

Turn off heat, keep covered for 10 minutes. Fluff with a fork and serve warm.
