Holi celebration is incomplete without Dahi Vada and this healthy, no-oil version by Chef Aruna Vijay is a must-try.
¾ cup moong dal 1 cup urad dal 1-inch ginger 1 green chilli Salt Water Yoghurt Beetroot powder (optional) Sugar To Garnish Pomegranate seeds Tamarind chutney Green chutney Red chilli powder Carrot & radish slices
1. Soak moong and urad dal in water for at least 4-5 hours. 2. In a mixture jar, add the soaked dal, ginger, green chilli, and a little water. 3. Grind to make a thick paste.
4. Now, add some salt to the dal mixture and whisk well. 5. Let the mixture rest for 10-15 minutes.
5. Steam the mixture in an idli stand for 10-15 minutes.
6. For the dahi mixture, mix yoghurt salt, beetroot powder, and sugar in a bowl.
7. To assemble, place the steamed vada on a plate. 8. Top with dahi mixture. 9. Garnish with pomegranate seeds, beetroot slices, radish & carrot slices.
And that’s it! Your healthy, zero-oil Dahi Vada is ready to be served and enjoyed.
