• Start preparing Milagai Podi by dry roasting chana dal, toor dal, and urad dal on a pan one by one. Do not roast all the types of dal at once. Follow this step on a low flame.

• Following the same process, dry roast cumin seeds and sesame seeds for some time as well. • Let all the roasted ingredients cool down.

• Next, take a pan and add oil. Temper dried red chillies, sesame seeds, curry leaves, cumin seeds, asafoetida, and salt. • Grind it into a smooth powder.

• Next, blend the rest of the dry roasted ingredients and mix both powders. • Grinding the ingredients differently helps in getting the desired fine texture. • Once done, transfer the podi to an airtight container.
