Ingredients

Spinach - 4 bunches Onions - 3 medium sized Oil - 1 tablespoon Chana dal - 1 teaspoon Coriander seeds - 2 teaspoons Cumin - 1 teaspoon Red chilli - 5-6

Step 1 

Heat oil in a pan, add chana dal, coriander seeds, cumin seeds, and red chilies. Fry for 5 minutes and grind to a coarse powder.

In the same oil, fry onions until golden brown. Add salt and tamarind. Let cool.

Step 2

Grind the cooled spice mixture with onions into a coarse paste. Adjust salt and add red chili powder.

Step 3

Heat fresh oil in another pan. Add cumin seeds, mustard seeds, chana dal, garlic, curry leaves, and turmeric.

Step 4

Add the washed spinach to the pan and cook until wilted.

Add the prepared onion masala to the pan and mix well. Simmer for a few minutes and it's  ready!
