With the Litchi season upon us, Chef Aruna Vijay shared the recipe for Litchi Paneer Gravy, and here’s how you can make it at home.
For the Makhani Gravy 2 tbsp cooking oil 1 chopped onion 3 medium chopped tomatoes 1-inch ginger 6-7 cloves of garlic 3 dried red chillies 14-15 cashews Handful of coriander stems 1 tsp salt 1 tsp sugar ¾ cup water 1 tsp garam masala 1 tsp hand-crushed kasuri methi Cream (to garnish)
For the Stuffed Litchis 1 cup grated paneer 1 tsp salt 1 tsp black pepper 1 tsp garam masala 1 chopped green chilli 2 tbsp chopped coriander leaves 6-8 peeled & deseeded litchis

1. In a pressure cooker, add oil and some chopped onions, tomatoes, ginger, garlic, red chillies, cashews & coriander stems. 2. Then, add some salt, sugar, and water and let the gravy cook.
3. In a bowl, mix the grated paneer with all the mentioned ingredients. 4. Mix it together.
5. Now, stuff the litchis with the paneer mixture.
6. Once the gravy is cooked, blend it to make a smooth paste. 7. Add garam masala and kasuri methi. 8. Next, add the paneer-stuffed litchi and bring the gravy to a boil.
And that’s it, your Litchi Paneer Gravy is ready to be devoured!
