Aluvadi or Aloovadi is a traditional Maharashtrian snack which is generally served during tea time.
It is also known as Paatra in Gujarat and Patrode in Karnataka.
5-6 Colocasia leaves 2 TBSP tamarind water 1 tsp cumin powder 1/2tsp hing 1 tsp red chilli powder
3 tsp grated jaggery water 1-1/2 cup gram flour 1/2tsp turmeric powder 1 tsp coriander powder 2 tsp grated garlic
1. Clean and wipe the leaves to remove extra moisture. 2. Flattened the thick veins on the leaf to make rolling easy.
3. Mix flour, tamarind, spices, jaggery, salt, and garlic. 4. Add water and make a thick paste.
5. Leaving some space around the edges, apply this paste on the leaves. 6. Place all the leaves on one another like a stack of 3 each.
7. Steam these rolls and to check insert a knife. If it comes out clean, aluvadi is ready. 8. Serve it after it cools down. You can also give it a tempering of fennel seeds and sesame seeds with oil.
