Make Bengali Shukto At Home In 7 Steps

– Potato – 2 cups – Raw banana – 1 cup – Raw papaya- 1 cup – Bitter gourd – 1 cup – Drumstick – 1 cup – Carrot – ½ cup – Eggplant – ½ cup – Green beans – 1 cup – Radish – 1 cup – Milk – 1 cup

– Bori – ½ cup – Mustard seeds – ½ tsp – Bay Leaves – 2 – Dry red chillies – 2 – Caraway seeds – 1 tsp – Panch phoron – 1 tsp – Powdered turmeric – 1 tsp – Salt – as per taste – Water – Oil

Firstly, wash all the vegetables nicely and then cut them in 1-inch size.

In a pan, heat some oil and fry bori till golden brown and crispy. Take it out.

Step 2

Then saute separately the bitter gourd and potatoes for a couple of minutes and keep it aside.

Now add to the pan chillies, bay leaves, seeds and panch phoran. Saute well and then add all the veggies except brinjal. Add the pre-sauteed things.

When everything is softer, add brinjals, salt and turmeric and mix well.

Now pour in some milk and a little bit of water, mix well and let it simmer for at least 10 to 12 minutes.

Take if off the flame, garnish with ghee and serve hot with rice. Enjoy!
