MasterChef India's Aruna Vijay has a delicious recipe for Bangalore's Rameswaram-style Ghee Podi Idli.

-2 cups of Regular Raw Rice -1 1/4 cup of Poha -1 cup of Thick Curd -1/2 Cup of Water (Add more if needed0 -1.5 tsp salt -1 tbsp of Eno

Soak the rice and poha separately for 3 hours. Then grind them both in separate batches.

Add curd and water while grinding and let hte batter rest. Then, add Eno soda in half the batter.

Pour the idli batter into the steamer and cook them.

-1 cup of Chana Dal -1 cup of Urad Dal -1/4 cup of Pepper -3 cups of Dried Red Chillis -Curry Leaves -1 tbsp of Hing -1 1/2 tbsp of Salt -1/3 cup of Sesame Seeds

Roast each ingredient separately. Then grind them together to make the podi.
