1. To make the aloo filling, start by peeling and mashing the boiled potatoes. 2. Then, in a pan, heat some oil and add 1 tsp mustard seeds, 7-8 curry leaves, 2 green chillies finely chopped, and 1 tbsp ginger garlic paste to it.
3. Add the mashed potatoes to the pan. 4. Then, put 1/4 tsp haldi, 1/2 tsp red chilli powder, and salt, and mix it well.
5. Take a puff pastry sheet and roll it out a bit. 6. Fill it with the aloo filling & fold it into a triangle shape.
7. Line a tray with parchment paper and place the pastry on it. 8. Brush it with some olive oil or butter.
9. Now, bake the puffs in the oven for 20 mins at 200°C. 10. Take them out once they turn golden brown & crispy.
And that’s all, your crispy and flaky Aloo Puffs are ready to be served and enjoyed!
