- 250 gm of prawns - 2-3 tbsp of corn starch - 1 tbspof light soy sauce - 2-3 chopped Thai bird eye chilies (or green chilies) - 2 tbsp of chopped spring onion whites - 2 chopped lemon leaves - 1 tbsp of chopped coriander - 2 tbsp of chopped spring onion greens - 1 tbsp of crushed ginger and garlic - Salt to taste - 1/2 tsp of crushed black pepper - 6-8 slices bread (crust removed) - 2 tbsp of mixed white and black sesame seeds - Oil for frying - 1 tbsp of butter for frying

First, add prawns in a food processor to make a coarse paste.

Then, add the prawn paste, herbs and spices in a bowl and mix well.

Cut the crusts off the bread and spread the prawn mixture on one side of the bread. Sprinkle the white and black sesame seed over the prawn mixture.

Cut each slice of the bread into triangles.

Pan fry the toast till it turns golden brown and crispy.
