Make Ladi Pav Easily At Home In 6 Steps With Chef Neha Deepak Shah's Recipe

If you love baking and wish to indulge in freshly baked pav at home, here's a recipe by Chef Neha Deepak Shah to follow. 

Homemade Pav

• 2 cups all-purpose flour • 3/4th cup & 2 tbsp water • 1 tsp salt • 4 tsp softened butter • 1 tbsp milk powder • 1½ tsp dry Yeast • 2 tsp sugar • Milk • Butter • Oil For Tangzhong Roux • 2 tbsp flour • 5 tbsp water

Ingredients

• The first step to bake pav is to activate the yeast. Take a bowl of warm water and add sugar and dry yeast. Give everything a nice mix and keep the bowl aside for 10 minutes.

Step 1

• To make Tangzhong Roux, combine 2 tbsp flour and 5 tbsp water and cook the mixture on low flame till its consistency thickens.

Step 2

• Next, take a big bowl and combine flour, milk powder, tangzhong roux, salt, and yeast water to knead a soft dough. Once done, knead it again with butter.

Step 3

• Take a cloth piece and cover the bowl till the dough doubles its size. Once the dough is ready, knead it gently and form small pav balls. Layer a tray with these balls and keep enough distance between each piece.

Step 4

• Take a small bowl and mix milk with sugar to make a milk wash.

Step 5

• Once the dough balls have doubled in size, brush the milk solution on them evenly and gently.  Bake it at 190°C for about 15 minutes in an oven. Once baked well, take out ladi pav from the tray, apply melted butter, and let it cool down for an hour. Make sure to cover the treat using a cloth piece.
