Chef Kunal Kapur took to Instargam to share a Lauki Ki Barfi recipe and it is perfect for the wedding season.
2 litres full-fat Milk 2 kg lauki 500 grams sugar ½ tsp cardamom powder Ghee Green food colour Chopped cashew nuts Chopped almonds Chopped pistachio

1. Peel the lauki and let it soak in the water for some time. 2. Next, grate the lauki and keep it aside.
3. In a kadhai, take 2 litres of full-fat milk. 4. Let it simmer for a few minutes. 5. Once the milk starts bubbling up, squeeze out the excess water for the lauki and add it to the kadhai.
6. Let it cook till the mixture thickens & stir occasionally. 7. Then, add 500 grams of sugar to it and keep stirring.
8. Add ½ tsp cardamom powder along with some green food colour.

9. Once the mixture thickens, add in the cashew nuts, almonds, and pistachio. 10. Put the lauki barfi mix on a plate and press it down evenly.
Once the Lauki Ki Barfi cools down, you can cut it into small pieces and enjoy!
