Mini Pineapple Upside Down Cakes

Ingredients

-2 tsp ghee -2 tsp jaggery -1 tsp eno/baking soda -1/3 cup small diced pineapple For blending - -1/2 cup rolled oats -1/3 cup whole wheat flour/atta -1/3 cup oil -1/3 cup curd -2 small ripe bananas -2 pitted dates -1-2 tsp vanilla extract -1/2 cup skim/any milk

Step 1 

Blend all the listed ingredients.

Mix in the eno, whisk and let it sit for 5 mins.

Step 2 

Heat the pan, brush with ghee, sprinkle some jaggery and add a few pieces of pineapple cubes.

Step 3 

Sprinkle some more jaggery on top and then add in about 1 -1.5 tbsp of the batter into each hole.

Step 4 

Cover and cook on a low flame for about 5-6 mins.

Step 5 

Use a spoon to gently turn it over, and cook covered again for 4-5 mins. Serve it hot or cold.
