Caramelised Onion And Mushroom Soup

Ingredients

-2 medium onion -400g mushrooms -5-6 cloves of garlic -50g paneer or feta cheese -Salt & pepper as per taste

Step 1 

Start by caramelising thinly sliced onions, then add mushrooms and garlic.

Once they start to brown, add it to a blender with paneer and blend it into a smooth purée.

Step 2 

Into the same pan add oil, and sauté sliced mushrooms until they turn golden and crispy.

Step 3 

Add the purée to the mushrooms, along with water as per your desired consistency.

Add pepper & salt, let it boil for 2 minutes.
