Make This Famous Malabar Dish, The Chatti Patthiri, In 6 Easy Steps

Ingredients

For the Patthiri (Crepes): -1 cup all-purpose flour (maida) -1/2 egg (or 1 whole egg) -Salt to taste For the Chicken: -300 grams boneless chicken, cut into thin strips -Salt, pepper powder, and red chili flakes to taste -Little oil for stir-frying For Assembling: -2 eggs, whisked -Salt and black pepper powder for the eggs

Ingredients

-2 cups chopped vegetables (onions, capsicum, bell peppers, tomatoes) -1 teaspoon chopped garlic -2 teaspoons red chili powder -1 teaspoon red chili flakes -1 teaspoon cumin powder -2 teaspoons black pepper powder -1 teaspoon all-purpose flour (maida) -1/3 cup grated cheese (processed + mozzarella) -Salt to taste -Little water -2 tablespoons butter + oil

Step 1 

In a bowl, combine flour, egg, and salt. Add water gradually to make a thin batter.  Heat a non-stick pan, pour a ladleful of batter, and swirl to form a thin crepe. Cook until lightly browned on both sides. Repeat with remaining batter to make 8-9 crepes. Set aside.

Heat oil and butter in a pan. Add garlic and saute for a minute. Add chopped vegetables and cook until softened. Stir in red chili powder, flakes, cumin powder, black pepper powder, and salt. Saute for a few minutes. Add flour and mix well. Add a little water to create a thick paste. Finally, incorporate the grated cheese. Set aside.

Step 2 

 In a separate pan, heat oil. Add chicken strips, salt, pepper powder, and red chili flakes. Stir-fry until cooked through. Set aside.

Step 3 

 In a deep pan (kadhai), dip a crepe in the whisked egg. Place it in the bottom of the pan. Spread a layer of the prepared vegetable stuffing on the crepe. Top with cooked chicken strips.

Step 4 

Repeat steps 4 with remaining crepes, stuffing, and chicken, creating layers. Pour the remaining whisked egg over the top layer. Add some butter on the sides and top.

It Is Now Ready

Cover the pan and cook on low heat for a few minutes. Carefully flip the chatti pathiri onto a plate and then back into the pan to cook the other side. Cook until the bottom is golden brown and the eggs are set. Remove from heat and serve hot.
