- multigrain dosa batter - 2 eggs 🥚 - salt - red chilli powder - green chilli ( optional) -chopped onion, tomatoes, carrot etc (as per your preference) - oil/ ghee

Place a dosa tawa or non-stick skillet over high heat. Once hot, lower the heat and splash the tawa with water.

Pour two ladles (2-3 tbsp) of dosa batter in the centre of the tawa. Use the back of the ladle to spread it into a thin, even layer.

Increase the heat to medium-high. Drizzle a little oil or ghee around the edges and on top of the dosa.

Crack an egg in the centre of the dosa and break the yolk using a spoon. Spread the egg evenly across the surface of the dosa.

Sprinkle red chilli powder and finely chopped onion, tomatoes, carrot and green chilli

Once the dosa is golden and crisp at the bottom (about 1-2 minutes), flip it over and cook for a further minute.

Flip the dosa again and fold it in half. Serve hot with chutney or curry of your choice.
