-1 kg mutton -Whole garam masala (bay leaf, cinnamon stick, black peppercorns, cloves) -Red chili powder -Kashmiri chili powder (soaked for 30 minutes) -Ginger-garlic paste -Ghee -2 onions (big) -Salt -Mutton masala -Ground garam masala -Whole red chilies (100-150 grams)

Marinate the Kashmiri chili powder for 30 minutes.

Heat ghee in a cooker and fry onions until golden brown.

Add ginger-garlic paste, mutton masala, ground garam masala, red chili powder (as per your spice preference), and whole red chilies. Fry for a while.

Add mutton and salt. Fry until the mutton is sealed.

Add a little water and cook for 5-6 whistles in a pressure cooker (or until the mutton is tender).

Let the pressure release naturally and then open the cooker. If the gravy is too watery, cook it open for a while to thicken.
