Chef Aruna Vijay shared the recipe for Mushroom Podi which will make a flavoursome and healthy addition to your food.
The podi is made with sundried mushrooms and that makes it an amazing source of Vitamins D and B12.
2 boxes button mushroom 1 tsp oil 2 tbsp channa dal 3 tbsp urad dal 1 tbsp cumin seeds 1 tbsp black pepper 20-25 curry leaves 3 tbsp sesame seeds 10-12 dried red chilli Salt ½ tsp asafoetida (Hing)
1. Wash and use a mandoline slicer to thinly slice up the mushrooms. 2. Sun-dry the mushrooms for 2 days, or till it’s crispy.
3. In a pan, heat oil and roast channa dal and urad dal until golden and aromatic. 4. Remove the dal mixture from the pan and set aside.
5. In the same pan, roast cumin seeds, black pepper, curry leaves, and sesame seeds until fragrant. 6. Remove the spice mixture & roast the dried red chillies in the pan until fragrant.
7. Add the dried mushrooms to the pan and toast for 2 minutes. 8. Combine all the roasted ingredients in a blender jar. 9. Add salt and hing, and grind into a smooth powder.
Serve the Mushroom Podi with idli, dosa, uttapam, or other South Indian dishes.
