1. Classic Vegetable Soup

In olive oil, sauté the celery, carrots, onions, and garlic. Add your favourite veggies, diced tomatoes, and vegetable broth. Cook the veggies for a while until they become soft, and use herbs such as basil and thyme for seasoning.

2. Creamy Butternut Squash Soup

Roast butternut squash with olive oil, salt, and pepper. Blend the roasted squash with vegetable broth until smooth, and add a dash of nutmeg and a swirl of cream or coconut milk.

3. Lentil Soup

Sauté onions, carrots, and garlic, then add rinsed lentils and vegetable broth. Simmer until the lentils are tender, and season with cumin, paprika, and a splash of lemon juice.

4. Broccoli Cheddar Soup

Cook onions and garlic, and add chopped broccoli and vegetable broth. Simmer until the broccoli is tender. Lastly, blend part of the soup, stir in shredded cheddar, and let it melt.

Simmer coconut milk, vegetable broth, lemongrass, ginger, and garlic. Add sliced mushrooms, bell peppers, and tofu, and season with lime juice, soy sauce, and a touch of sugar.

Sauté onions, peppers, and garlic. Add black beans, vegetable broth, and diced tomatoes. Simmer, then partially blend for a thick texture. Lastly, season with cumin, chilli powder, and cilantro.
