Chef Kunal Kapur took to Instagram to share the recipe for super creamy and delicious Almond Jelly that is made without an egg or gelatin.
100g soaked almonds 2 ½ cup water 4 ½ tbsp cornflour 1 cinnamon stick ½ cup sugar Vanilla essence (optional)
1. Add soaked almonds and water in a blender and blend to make almond milk. 2. Strain the mixture well.
3. Now, take the cornflour in a bowl and mix it with a lit bit of almond milk to make a slurry. Make sure there are no lumps.
4. Take a pan and add the remaining almond milk to it. 5. Cook it on medium heat. 6. Add cinnamon stick, sugar & vanilla essence and mix well.
7. Once the mixture comes to a boil, add the cornflour slurry to it. 8. Keep stirring and let it cook on low heat till the mixture thickens.
9. Pour the mixture into moulds or bowls and let them set for some time.
Once the mixture sets, de-mould, garnish with toasted almonds and enjoy!
