Made without any atta or maida, this Sabudana Momo recipe by Chef Neha Deepak Shah is a must-try.
For dough 1 cup sabudana (soaked in 1 cup water for few hours) For filling ½ cup grated paneer 1 cup chopped cabbage ½ cup chopped carrots ¼ cup chopped French beans 2 tbsp chopped coriander leaves 2 tbsp chopped spring onions greens 1 tsp chopped ginger 3-4 chopped garlic cloves 2 chopped green chillies 1 tbsp Schezwan sauce ½ cup grated cheese Salt Pepper Chilli flakes Oil

1. Put soaked sabudana in a blender and pulse it a few times till you get a thick paste.
2. To prepare the filling, heat oil in a pan & add ginger, chilli & garlic to it. 3. Saute it for a few minutes and add all the vegetables. 4. Then, add the Schezwan sauce and salt to it and cook it for a minute.
5. Then, add in the paneer along with some pepper and chilli flakes. 6. Take it off the heat and optionally, add some grated cheese and mix well.
7. Grease your palms well and divide the dough into small portions. 8. Flatten each portion and put bits of the filling in the centre.
9. Pinch the edges to seal the momo. 10. Steam them in a preheated steamer on high flame for 10-12 mins and garnish with chilli oil and sesame seeds.
And that’s it, your Sabudana Momo are ready to be served and enjoyed!
