Crackers or biscuit cracker crumbs, Unsalted butter, melted, Granulated sugar, Heavy cream, divided, Powdered sugar, Pure vanilla extract, Cream cheese, at room temperature, Granulated sugar, Pumpkin puree, Pumpkin pie spice, Ground cinnamon, Salt.

Place graham crackers in a food processor and process until fine crumbs.

Mix melted butter and sugar into the crumbs crumb mixture into individual glass jars and press it evenly onto the bottom.

In a stand mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip on medium speed until soft peaks form.

In the same mixing bowl, place cream cheese and sugar. Whip at low speed until combined. Add pumpkin puree, pumpkin pie spice, ground cinnamon, and salt.

Gently fold in half of the prepared whipped cream into the pumpkin cream cheese mixture using a spatula.

Transfer the pumpkin cheesecake mousse mixture to a piping bag and pipe it over the crust in the individual glass jars.
