Recipe: Here’s How You Can Make Mangalore/Udupi Special Biscuit Roti At Home

Biscuit roti is a puffed up spicy, sweet and salty snack which is one of the most loved snacks in Mangalore and Udupi in karnataka. 

Biscuit Roti

– 3/4 cup Whole Wheat Flour – 1 tsp Baking powder – Salt , to taste – 2 tbsp Turmeric powder  – 1/4 cup Water

INGREDIENTS

– 1/4 tspMustard seeds – 1 tsp White Urad Dal  – 1/2 tsp Cumin powder  – 1/2 tsp Coriander Powder  – 1 tsp Sambar Powder – 1 txp Red Chilli powder

– 3 tsp Sugar – 1/2 cup Sooji (Semolina/ Rava) – 2 sprig Curry leaves  – Oil , for deep frying

INGREDIENTS

1. Take baking powder, wheat flour, salt and hot oil. Make a firm dough.  2. Cover and keep aside.

PROCEDURE

3. Now take a pan and heat some oil. Add mustard seeds and curry leaves and wait till they splutter.  4. Add urad dal and saute until brown.  5. Add all the spices, salt and sugar. Mix for 3-4 mins and keep it aside.

6. Take lemon sized dough and roll it. 7. Add one tsp of the spices filling in it.  8. Now closed it properly by folding from all the sides. 

PROCEDURE

9. Now roll thick puris out of it.  10. Fry these puris on medium heat until the puris are golden brown. 11. Serve it with tea or coffee.
