Kodubale is a crispy, deep-fried snack that is made from rice flour and a combination of spices.

The primary ingredients used in making Kodubale include rice flour, roasted gram flour (chana dal or pottukadalai), red chili powder, asafoetida (hing), sesame seeds, curry leaves, and other spices.

In a mixing bowl, combine the rice flour, roasted gram flour, red chili powder, asafoetida, sesame seeds, and chopped curry leaves. Add salt to taste.

Heat 2-3 tablespoons of oil until it's hot. Pour this hot oil over the dry ingredients in the mixing bowl. Mix well to distribute the hot oil throughout the mixture.

Gradually add water, little by little, and knead the mixture into a firm and smooth dough. The dough should not be too sticky or too dry.

Divide the dough into small portions and roll them into thin ropes. Join the ends of each rope to form a ring shape.

Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully slide a few Kodubales into the hot oil. Fry them in batches.

Fry the Kodubales until they turn golden brown and crispy. This should take about 5-7 minutes.
