Egg Yolks, Sugar, Milk, Cloves, Cinnamon, Heavy Cream, Nutmeg, Vanilla Extract, Bourbon Or Rum And Egg Whites (Optional)

Beat egg yolks in a large bowl until lighter, then gradually add sugar, beating after each addition. Beat at high speed or whisk until fluffy.

Heat milk, cloves, and cinnamon in a saucepan over medium heat until steamy hot but not boiling.

Slowly whisk the eggs into half of the hot milk mixture, then pour it back into the saucepan.

Cook the eggnog on medium heat, stirring constantly with a wooden spoon, until it thickens slightly and coats the back of the spoon.

Take eggnog from the heat and steadily add cream in it.

The mixture should be strained through a mesh strainer to remove any curdled bits or cloves that may have formed. Let it chill for an hour.

These are optional steps: 1. You can add rum or bourbon in eggnog. 2. You can beat egg whites and add it to the eggnog.
