Recipe: Make This Delicious & Nutritious Rushichi Bhaji, A Maharashtrian Delicacy

Ingredients

Oil, Cumin Seeds, Colocasia Stems And Leaves, Pumpkin, Raw Banana, Corn, Ridge Gourd, Red  Amaranth Vegetable, Cucumber, Peanuts, Coconut, Chillies, Tamarind Pulp, Salt, Jaggery And Water

Step 1

Take a pan and heat some oil. Then, add cumin seeds and let it splutter.

Step 2

Now, start by adding chopped colocasia roots, stem and vegetable.

Now, add chopped raw banana and pumpkin.

Step 4

Now, add corn pieces, chopped ridge gourd and red amaranth vegetable in the pan.

Then, add cucumber, peanuts and matar and cook it for a few minutes.

Step 6

Make a vatan for the bhaji by grinding coconut and green chillies.

Step 7

Now, add the vatan to the vegetable and pressure cook the sabji. 

Your rishichi bhaji is ready to savour!
