During Onam, Ada Pradhaman, a famed payasam from Kerala, is a must-have.

It's a delectable dish made with coconut milk, jaggery, and rice ada (thin rice flakes). Slices of coconut, raisins, and ghee-roasted cashews are used as garnish.

Here's how you can prepare this traditional payasam, Ada Pradhaman

Rinse the rice flakes (ada) in water. Then soak them in enough water. for about 30 minutes. After soaking, drain the water and steam the ada. Once cooked, spread the ada on a plate and let them cool.

In a saucepan, add grated jaggery and water. Heat over medium heat, stirring continuously until the jaggery melts and forms a syrup.

In a large pan, add the jaggery syrup, add the cooked ada and mix well. Allow them to cook together for a few minutes. Pour in the coconut milk and mix well. Add the ground cardamom and a pinch of salt

In a separate small pan, heat ghee. Add some thinly sliced coconut pieces, cashew nuts and raisins and roast until golden brown.

Add the roasted coconut pieces, cashews, and raisins to the payasam and mix well. Serve the Ada Pradhaman warm or at room temperature.
