Recipe: Treat Your Family With A Warm Home-made Pumpkin Lasagna This Fall

Pumpkin Season Is Here! 

Here is one of the special pumpkin recipe to try out this fall.

Ingredients:

Chicken thighs, boneless skinless pumpkin, onion, finely chopped cloves, garlic, crushed, red wine, tomato paste,  chicken stock, chopped tomatoes, dried oregano, chopped fresh rosemary,  balsamic vinegar, chopped spinach, packet lasagna sheets

Step 1

Preheat the oven to 180c regular bake.

Step 2

Heat oil, brown chicken, transfer to roasting dish with pumpkin, season, bake 20-25 minutes until pumpkin soft, cool, mash pumpkin, shred chicken.

Step 3

In chicken pan, add olive oil, onion, cook 5 mins till soft. Add garlic, cook 2 mins. Pour wine, bubble 30 seconds. Add tomato paste, stock, tomatoes, herbs, balsamic. Simmer 20 mins, reduce to thick sauce. Add spinach, chicken last 5 mins. Season with salt and pepper.

Step 4

Melt butter with flour, cook 5 mins (no browning). Remove, slowly whisk in milk. Return, stir until thickened, add cheese, season, and remove from heat.

Step 5

Grease baking dish. Layer: 1/3 tomato mix, 1/3 cheese sauce, lasagne sheets. Repeat, add mashed pumpkin, finish with white sauce. Sprinkle extra cheese.

Step 6

Cover with foil, cut a couple of steam holes, and bake for 35 minutes. Remove the foil and grill until the top is golden brown and bubbling. Rest for about 10 minutes before you serve it if you can, to let the juices settle
