Chef Aruna Vijay shared the recipe for cold and no-dough Beetroot Dumplings and you can put it together in no time.
1 big beetroot 1.5 cup water 2.5 tbsp sugar For assembling - Basil Pesto Orange segments Crumbled paneer Salt Pepper Chopped walnuts
1. Peel and slice the beetroot into thin roundels.
2. In a saucepan add water and sugar; let it come to a boil. 3. Blanch the sliced beetroot into the saucepan for a few minutes.
4. Once done, pat them dry.
5. Take a beetroot and spread pesto, orange, seasoned paneer crumbles, and chopped walnuts.
6. Seal it and it’s ready to be served. 7. You can garnish it with basil leaves and chopped walnuts.
